6oz Filet of Fresh Florida Grouper
2oz of chilled fresh watercress
1 Medium yellow ripened carambolas
3 large shrimp peeled and devained
1tbls. Olive Oil
(3) 4" skewers
Salt and pepper to taste |
Sear off Grouper in a hot pan or grill to your liking. Place the watercress on top of fish making a little bed of greens. Sear or grill off skewered shrimp to your liking. Place a section of grilled Carambolas on the bottom or skewer and place remainder of skewer into the grouper vertically standing them up. Spoon Chutney over the Fish making a nice Glaze and enjoy
Sauce:
In a regular sauce pot lightly sautŽ off diced peppers, onions and ginger. Place carambolas in sauce pan with brown sugar, vinager and Peppers onions and ginger and cook over moderate heat for roughly 30 minutes or until desired thickness. |
