4 oz. Sauted Shrimp
2 oz. Fresh Chopped and Sauted Spinach
1 oz. Goat Cheese
Phylo Dough
Salt & Pepper to Taste
1 Egg
6 oz. Clarified Butter

Purchase phylo dough from your local grocery store in the frozen foods section. Set out at room temperature to defrost and soften. Once soften and workable, remove 3 sheets and open leaving them stacked together. Use a pastry brush to lightly coat the outside with butter. Place 1 oz. of goat cheese inside the spread to coat the sheets. On the bottom 1/3 of the sheets place the saut?ed spinach and saut?ed shrimp. Roll up as if to roll a tube. Egg wash close to seal the sheets.
Place in a 400° oven and cook approximately 10-12 minutes or until golden brown.
Slice at an angle and serve with baby greens and garnish with a balsamic reduction. |
